Tuna and Cheese Snack

This is a quick snack to make when you have only a little on hand. You could use crackers as I did, or slice up some bread and use that instead. If you use bread, I recommend toasting it prior to adding the topping, otherwise it will probably get soggy. 



Ingredients
Cheddar cheese, sliced into small pieces
1 or 2 tomatoes
1 can of tuna, in water (the tuna in olive oil tastes better but has more calories.... sad)
3 Tablespoons mayonnaise
1 teaspoon dill weed
1/2 lemon, juiced (I used lemon juice rather than a fresh lemon)
3 or 4 tablespoons of onion, diced finely
salt, pepper
crackers or bread

1. Preheat oven to 350F. Drain the tuna of its water and put in a medium sized bowl.
2. To the tuna add remaining ingredients except crackers and cheese.
3. Arrange the crackers/bread on a baking sheet and top them with the tuna mixture. Add a small slice of cheddar to the top of the tuna. 
4. Place the crackers in the oven and bake until the cheese is melted, about 10 minutes.

5. Good things to add to this: basil, celery, anything else?

  1. Some people add diced carrots to their open faced tuna melts, but I wouldn't. I'd consider shredding the cheese and using an english muffin (whole wheat, of course ;)
